A sweet coffee from the Los Rodriguez family in Bolivia. This Java Natural from their Waliki farm in Caranavi runs through a drying method specific to their farm, called coco natural (nothing to do with coconut).

Cherries are washed, laid out on patio for 48 to 72 hours, then moved into one of Buena Vista's stationary box dryers until they hit 11.5% humidity. It's a setup particular to their wet mill, and it shows in the cup: vanilla, stewed cherries, brown sugar, and an edge of booze on the finish.
